When it comes to steaks we live and die by the mantra, "fat is flavor," and that's part of the reason we love the Delmonico at Steak 44.

The dish takes its name from the defunct Delmonico's Restaurant in lower Manhattan and can refer to several different cuts of beef. At Phoenix's Steak 44 it means a boneless rib eye, which will cost you $31 for a 12-ounce steak and $37 for a 16-ounce size. Compared to the $46 price tag on a 12-ounce filet mignon, we think this dish is practically a steal.

As with all rib eyes, the Delmonico is a heavily marbled piece of meat that's also 28-day wet aged and handcut at Steak 44. We love that the tender, flavorful slab of beef arrives at the table soaked in butter and cooked to a perfect medium rare. A side order of truffle butter makes things even more decadent, though we don't see the point of distracting from the flavor of this near-perfect steak.
