Great list! The thai chicken salad at LGO has potential to be my favorite but it's wildly inconsistent. One week it's more of a larb gai over lettuce (that's the one I like) and the next week it's a ton of lettuce with chicken tossed in. They are pretty inconsistent with all of their salads though so I live with it. Definitely my favorite to grab at the airport location for a flight.

I can think of three and only one is on the list, the cortado at Gallo Blanco Cafe y Bar. Also, the watermelon salad at FnB Scottsdale and the lentil fatoosh at Pita Jungle :)

Great post! Another one of my favorite salads of all time is the Caribbean salad at Pita Jungle! It's pure fruit and veggie love!!
