Don't be confused-- they may not look like radishes, but they definitely taste like them.
If you drop into Pane Bianco around this time of year, chances are you've seen Maya's watermelon radishes on the menu for the market salad. Not only are these radishes a colorful addition to any salad, they're also a great way to introduce someone to the world of radish eating. That's because the milder, slightly sweeter flavor of the watermelon radish makes it a much more palatable alternative to standard radishes. Grown at the Farm on South Mountain in Maya's Farm on an ancient river bed site, these root veggies make quite an impression from farm to market to table.

Watermelon radishes can be cooked, but the vibrant pink meat retains its color best when served raw. We suggested that you grab a few of Maya's tart Arkansas Black apples, which pair nicely with the spicy, but still sweet, watermelon radishes. Mixed with citrus and fresh herbs like mint, parsley and fennel, you could make a wildly flavorful salad. Or you could savor the bright, beautiful radishes for weeks to come by brining them in vinegar and lemon juice.
