The once-vacant Canvas building, located on the northeast corner of Third and Roosevelt Streets in Phoenix, is showing some signs of life.

Last weekend, the second location of Scratch Pastries, Duc and Noelle Liao's patisserie and café in Scottsdale, opened its doors as did Pallets Food and Bar, a new, breakfast, lunch, dinner, and late-night spot featuring Vietnamese, Chinese, and Japanese food.

Here's what diners can expect:

Pallet's menu is a sizable listing of Vietnamese, Chinese, and Japanese eats in the form of starters, porridge, pho (noodle soups), vermicelli, crepes, and sushi. Dishes include Kung Pao chicken, Hue-style beef and pork blood with rice vermicelli and vegetables, bánh mì sandwiches, salt & pepper fish balls, and sushi rolls like spicy tuna and poached salmon.

With the exception of the sushi boats, most dishes stay in the $7 to $10 range.

Featuring a patio, wall garden, and hanging chairs, Pallets will also sport a bar with over twenty beer taps. Those who want to enjoy a drink in non-alcoholic form can select from a huge listing of coffee, milk and flavored teas, and 30 kinds of snow drinks and slushies.

Two additional eating spots in the old Canvas building, an Italian restaurant and an ice cream parlor, are said to be on the way.

Pallets Food and Bar is currently open from 6 a.m until midnight every day, but will eventually stay up even later -- until 2 a.m. -- once business is underway.
