Country Velador, pastry chef at Cowboy Ciao, came up with this genius pairing: traditional apple cobbler with duck fat ice cream. Based on taste alone, you'd never guess that duck fat is the secret ingredient that makes this one of the best desserts in town. The ice cream is incredibly rich and buttery, making this a fast favorite for fans of butter rum. As for the cobbler, the apples are sliced nearly paper thin, the crumble topping is tender yet crispy, and it has a sweet, traditional flavor that doesn't hold back on the cinnamon. More, please.
