Raw Vegan Chocolate Chip Cookie Dough: Don't Knock It Till You've Tried It

I never thought twice about cookie dough until Pinterest showed up in my life. My problem with most cookie dough is that I'm sensitive to flour - I can't eat it. Luckily Pinterest offers many solutions to compensate for all the missed bowls of cookie dough ice creams and sneaky bites from cookie dough batters.

I shared one with you several months back; a chocolate chip cookie dough featuring garbanzo beans as the base. If you still haven't tried it, it's good. Get to it. I've made several batches...

Today I'm sharing another chocolate chip cookie dough. I know, I know... I can't help it! This one is raw (if you go through the trouble, otherwise it's "mostly" raw) and vegan and not quite as strange.

And, just so you know, I'm not the only one obsessed. Do a search for "raw vegan cookie dough" on Pinterest and BAM! Cookie dough fiends as far as the mouse can scroll.

This recipe originally comes from a blog called Averie Cooks. Judging by the fact that I only have one ball of cookie dough left and it's only been a couple of hours since I made them, I have to say it's pretty darn good.

Raw Vegan Chocolate Chip Cookie Dough Bites
2/3 cup raw cashews
1/3 cup oats
2 tablespoons agave
1 tablespoon maple syrup
1 teaspoon vanilla extract
1/4 c chocolate chips

In a food processor, or high-powered blender, combine the cashews and oats until you have something that resembles a flour. Add agave, maple syrup and vanilla and process until smooth. Place the mixture in a bowl and add the chocolate chips.

TIPS:

Do follow the directions and refer to Averie Cooks for details on how to preserve true raw status.
Don't get so excited to make the recipe that you place everything in the blender at once and wonder why it's not processing correctly.
Don't get really excited to make this recipe at 9 o'clock at night thinking you have all of the ingredients only to find out there are NO CHOCOLATE CHIPS to be found after everything has been measured out and is already sitting in the blender.
Do make the recipe and eat the whole batch if you feel like it cause it only makes a little bit. In fact, all it makes is what's featured in the cover photo.
