In Season: Simple Green Salad with Fruit and Honey Cinnamon Vinaigrette

Lately, in this In Season series, we're taking a look at what I take home from Crooked Sky Farms each week and see what I've done with my CSA share, or part share. This week I'm using lettuces and seasonal fruit.

I'm always trying to think of ways to lure people to salads in my kitchen. 'Tis the season of lots and lots of greens and salads and the same old thing day after day will absolutely not cut it. So, whilst imagining new easy vinaigrettes to perk up a Groundhog Day salad, this one was born. And it was sweet and crunchy and all gone before I knew it.

Simple Green Salad with Fruit and Honey Cinnamon Vinaigrette

Ingredients
Lovely lettuces, washed gently and well dried
Fruit, I had apples in the fridge, but you could an orange into chunks and stay super seasonal & local
Bread, day old and rustic - cut or torn into cubes
Honey Cinnamon Vinaigrette (recipe follows)

Honey Cinnamon Vinaigrette
¼ cup apple cider vinegar
¼ cup honey
1 teaspoon ground cinnamon
pinch of salt
¼ cup neutral tasting oil (like canola)

In a bowl or in a jar with a tight fitting lid, add the vinegar, honey, cinnamon, salt and whisk or shake until salt has dissolved. Stream in the oil and whisk until incorporated, or alternatively pour into jar and shake vigorously until blended together.

Place the lettuce, fruit, and bread in a glass, wood or stainless steel bowl big enough to toss the salad together without it falling out over the edge. Pour just enough vinaigrette to moisten (you can always add more) and toss gently until completely dressed with your clean hands or utensils.

Mound on your favorite side plate and enjoy. Add toasted nuts if you want to make a meal out of this beautiful salad.
