Binkley's Winemaker Dinner and Chili Tofu in Today's Eater's Digest

This upcoming Wednesday, January 11th, Binkley's in Cave Creek will be hosting their very first Winemaker's Dinner of 2012 with the talented winemaker Julie Johnson of Tres Sabores Winery. Chef Kevin Binkley has put together a pretty amazing seven-course menu for the evening which will be paired with wines straight from the Tres Sabores cellars including the debut of their very first Chardonnay from the Farina Vineyards on Sonoma Mountain and a new vintage of their prized red, ¿Por qué no?.

Menu highlights include poached pears, crab cakes with sugar snap peas and crispy prosciutto, guinea fowl flown in from Tres Sabores' Napa farms, seared seven-pepper braised bacon, elk Osso Bucco with creamer potatoes and a chocolate souffle for dessert. Dinner with wine pairings isn't cheap -- $110++ per person -- but we've heard they're worth it.
