44: Kung Pao Soy Chicken from Fresh Mint

Thanks to owner and executive chef Mai Ly, who puts a tasty Vietnamese spin on her creations at Fresh Mint, the friendly eatery of vegetarian, vegan, and certified kosher dishes in Scottsdale, we're happy to go meatless for a meal or two.

Especially when it comes to Ly's Kung Pao soy chicken.

Featuring classic Kung Pao sauce with garlic, soy chicken (the best part), crunchy peanuts, and veggies of white and green onions, zucchini, green bell peppers, and carrots, the flavor is full-on fresh -- with additional tastiness courtesy of the seasoned soy chicken.

Served with a side of rice, it's a sizable meal, but hey, if there's leftovers, we're not complaining.
