48: Tinga Quesadilla from Los Reyes de la Torta

Tinga may sounds like a dirty word, but it's actually one of the tastiest ways to eat shredded chicken, and makes a damn fine filling for burritos, tacos and everything in between. That's because tinga and tortillas were made for one another. Los Reyes de la Torta understands this harmonious relationship, and has perfected both their stewed chicken tinga and their awesome homemade corn tortillas. Don't forget a colorful glass of aguas frescas on the side!

The shredded chicken tinga was braised in chiles and tomato sauce until fork tender, and then wrapped in a thick, homemade masa tortilla. The corn meal of the tortilla was super thick but managed to remain light and tender, similar to the corn filling from a tamale, but with a nice crunch from a quick run on the grill. Since the quesadillas at Los Reyes come largely queso-free, we opted to have it served estilo del rey (king style), topped with crumbly cheese, onions, cilantro and crema. Definitely fit for royalty.

Tinga! I didn't know these guys did tinga. You can also make it at home with an equal ratio of chicken and onions. Don't forget the chipotle. Arre!
