Number 22: Hirame carpaccio at Nobuo at Teeter House

This one's for all the Sea Saw fans in the house, y'all.

Remember Sea Saw, chef Nobuo Fukuda's stylish Old Town restaurant where foodies huddled around the counter to eat impeccably crafted tasting menus? Fukuda's new restaurant, located in Downtown Phoenix, is much more accessible than his last spot, but he's still serving food that longtime fans will recognize and love.

His hirame carpaccio is one of those dishes that I was happy to rediscover after his yearlong hiatus, a unique take on carpaccio that's served with warm, fresh-out-of-the-oven focaccia to soak up all the delicious juices on the plate. Thinly sliced fluke, artfully arranged, is sprinkled with garlic, ginger, a bit of yuzu kosho, and sesame oil. 

I promise you'll clean the plate.
