An invitation to cook at Manhattan's James Beard House -- home of the late, great chef and food writer -- is a special honor for the country's best chefs, and last month Sassi executive chef Peter DeRuvo had a rare opportunity to do just that.
His July 21 dinner, titled, "Sassi's Italian Summer," was a lavish feast that earned him a standing ovation from member of the James Beard Foundation -- fried Castelvetrano olives filled with pork ragu, summer pea soup, squid ink tonnarelli, and roasted lamb loin with braised chicory, panelle, garbanzos, and red wine sauce were just a few of the dishes DeRuvo prepared for the lucky guests.
