Number 64: Albacore with black truffle at Crudo
The menu at tiny little Crudo -- in-house salon cafe by day, cutting-edge fine dining spot by night -- is never exactly the same upon repeat visits.
Chefs Cullen Campbell and Brandon Crouser use their humble open kitchen to play with seasonal ingredients and an array of fresh seafood (some of it shipped in directly from Tokyo's famous Tsukiji Market) every day, so you really need to enjoy things in the moment when you're here. Things are continually evolving.
One dish that's made numerous encore appearances, though, is from the list of crudo (Italian for "raw," and the inspiration for the restaurant's name). Slices of buttery, fresh albacore are artistically arranged with shredded apple, black garlic, and black truffle, amounting to an extremely fragrant, complex mingling of rich and tart, supple and crisp. It's a delicious and novel way to appreciate raw tuna.
