Chef Sara Siso's Almond Hummus
This week, Chef Sara Siso shared with us her thoughts about the benefits of a Raw Vegan diet. Now she shares one of her easiest recipes, a twist on the traditional hummus. Listed below are just some of the health benefits provided by the ingredients in this recipe.

Almond Hummus

Ingredients:

1 Cup raw almond soaked for 12 hours
1/4 Cup raw tahini
1/2 t fresh ground black pepper
6 Garlic cloves chopped
2 T ground Cumin
1/2 Cup olive oil
1/2 Cup lemon juice
1/2 Cup water
1/2 t Himalayan pink salt or Celtic salt
1 Bunch fresh cilantro washed

Preparation
Rinse the almonds and place in a food processor together with
the remaining ingredients and blend until creamy.

Benefits of Almonds
Almonds are a rich source of vitamin E, calcium, phosphorous, iron,and magnesium. They also contains zinc, selenium, copper and niacin. Almonds are the most nutritious nut out there.

Benefits of Tahini
Tahini has a higher concentration of calcium than any other food. It has protein, vitamins B1, B2, B3, B5 and B15, and essential fatty acids. Tahini maintains healthy skin too!
Sesame seeds are also a good source of the amino acid Methionine which is an important contributor to liver detoxification and helps with the absorption of other amino acids.
And finally, vitamin E which helps to reduce the rate of ageing in body cells.

Benefits of Garlic
Garlic protects the body against cold and flu. It's a powerful natural antibiotic, helps to lower cholesterol, fight cancer, heart disease, hypertension and infection. Garlic is also a natural mosquito repellent!

Note: Garlic is best eaten raw. Cooking garlic destroys the "allicin" compound which is responsible for the powerful healing effects of garlic.

Benefits of Olive Oil
Olive oil is rich in monounsaturated fat, a type of fat that researchers are discovering has excellent health benefits. Some of the proven benefits are protection against chronic degenerative diseases such as atherosclerosis, diabetes, asthma, colon cancer, and arthritis. Olive oil is also highly protective against heart disease. Diets in which olive oil is the main source of fat show lower blood pressure and less high cholesterol.

Benefits of Lemon
Lemons are a rich source of vitamin C, vitamin B, riboflavin, calcium, phosphorus, magnesium, protein and carbohydrates. They can also help relieve many digestion problems when mixed with hot water. Lemon helps to flush bacteria and toxins out of the body.

I just tried this recipe. Love it. The only other comment I would have is that you can really taste the garlic, which is good because I like it, but someone else might start with a little less and see what you'd like. Again, love the recipe! Thanks for sharing.
