"It's not an easy decision," she says.
Dempsey is busy working on opening Galette Dessert Bar, where she'll serve desserts, dessert-inspired cocktails, sandwiches, salads, and savory items. The location will likely be in Scottsdale, but she's keeping her options open.
"It's a really big project," she tells me. "I really need time to focus my attention on this. It's so hard to oversee three restaurants and a crew."
